It is made from our selected Chardonnay and Pinot Bianco grapes, harvested in advance not yet ripe to grant the proper acidity of the wine.

WINEMAKING: harvest is made fully by hand immediately followed by a soft pressing of the whole grapes. Thanks to selected yeasts the controlled fermentation takes place at 18°-20° C; the second fermentation that gives sparkling wine its lively effervescence is made in steel tanks at controlled temperature and lasts for 90 days at least granting a superb and fine quality to this classy sparkling wine.

CHARACTER: it’s a magnificent sparkling wine of straw yellow colour with greenish tinges, characterized by a fine and persistent perlage. Its bouquet is fresh and rich with fruity and floral notes, along with aromas of yeast and crusty bread. Soft as to taste, revealing many different flavours such as almond, banana and apple.

SERVING TEMPERATURE: 7° - 8° C.

WINE PAIRING: excellent as aperitif, perfectly pairs with delicate pastas, fishes and shellfishes.
