This species of vine is mostly grown in Piedmont, but it has found in the Bologna area an ideal habitat for its growing, giving the wines a typical identity. Only a small area of the Bassi winery produces this kind of grape and the wine obtained stands out for its liveliness and freshness. The low alcohol content improves drinking. The Bassi winery grows the grapes in the Maria estate, rich in clay and able to guarantee constant nutritional elements. The low production imposed on grapevines and the careful agronomic choices contribute to the production of a wine that is more and more appreciated by consumers.

TECHNICAL NOTES: This variety has a long phenolic cycle, in fact although the variety buds early (08-18/04), fruits ripen fairly late (01-10/10). The bunch of grapes is medium-sized, pyramidal, with blue-black pruinose grapes, rich in juice and acidity, for this reason grapes are also used to produce new wine.

WINEMAKING: The Bassi winery produces the sparkling version, which results as the combination of structure and taste of the wines produced in this area, enriched by the typical fruity taste of Barbera. To obtain this wine a refined winemaking technique is necessary, which foresees the possibility to work on the fermentation temperatures and soft handling of grapes in order to shorten the time of contact of must and peels, obtaining the most extraction of tannic and aromatic substances contained in the peels. The additional enrichment of bubbles, which makes the wine sparkling, takes place in tanks with pressure control manufactured for that purpose, with natural secondary fermentation. Storing at low temperature and the subsequent decanting allow the wine’s natural clearing.

WINETASTING: This wine is of intense red ruby colour, with vanishing crown and lively tone. Smell of fruits, especially sour black cherry and currant, with cinnamon and nutmeg nuances. Pleasant and light bubbles that can be felt in the mouth and stimulate salivation, preparing the palate to the balanced acidity, typical of this variety, which are immediately smoothed out by a pleasant sweet and fairly tannic aftertaste

SERVING TEMPERATURE: 8-12 °C.

WINE PAIRING: Cold cuts, first courses with meat sauces, stew and vegetables.
